Evaluation Of Antinutrients Level In Flour And Flour Products Consumed In Kaduna Metropolis, Kaduna- Nigeria
This study assessed the anti-nutrient (phytate, oxalate, lectin, cyanide and potassium bromate) contents of flour, biscuit and five bread samples consumed in Kaduna Metropolis. The anti-nutrient contents were analyzed using standard methods. In general, results showed that most flour products have lower content of anti-nutrients (bread: lectins; 0.005±0.0003, bromate; 0.0002±0.00002, cyanide; 0.0016±0.0002, phytate; 5.847±0.351, oxalate; 29.55±0.95 and biscuit: lectin; 0.00865±0.00053, cyanide; 0.00045±0.0001, phytate; 4±0.105, oxalate; 15.72±0.49) as compared to flour samples (Bromate; 0.00075 ± 0.00006, cyanide; 0.0055±0.0002, Lectin; 0.0103±0.00075, Oxalate; 12.13±0.27, Phyta
